Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 3 tbsp coconut oil, melted
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup pure maple syrup or monk fruit
- 1 cup grated carrot
Method
- 1Preheat oven to 340°F (170°C) and line a baking sheet.
- 2Mix all ingredients into a soft dough.
- 3Scoop tablespoons of dough and flatten slightly.
- 4Bake 11–13 minutes until edges are golden.
- 5Cool on the tray 5 minutes before transferring.
