Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 3 tbsp coconut oil, melted
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup pure maple syrup or monk fruit
- 3/4 cup pitted cherries
Method
- 1Mix the flours, oil, and a pinch of salt to form the crust.
- 2Press evenly into a tart pan and chill 15 minutes.
- 3Bake crust 10 minutes at 350°F, then cool.
- 4Whisk filling ingredients and pour into the cooled shell.
- 5Bake 20–25 minutes until set, then chill before slicing.
