Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 tbsp coconut oil, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup pure maple syrup or monk fruit
  • 1 tsp grated fresh ginger

Method

  1. 1Preheat oven to 340°F (170°C) and line a baking sheet.
  2. 2Mix all ingredients into a soft dough.
  3. 3Scoop tablespoons of dough and flatten slightly.
  4. 4Bake 11–13 minutes until edges are golden.
  5. 5Cool on the tray 5 minutes before transferring.
