Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 tbsp coconut oil, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup pure maple syrup or monk fruit
  • 3 tbsp pure maple syrup

Method

  1. 1Mix the flours, oil, and a pinch of salt to form the crust.
  2. 2Press evenly into a tart pan and chill 15 minutes.
  3. 3Bake crust 10 minutes at 350°F, then cool.
  4. 4Whisk filling ingredients and pour into the cooled shell.
  5. 5Bake 20–25 minutes until set, then chill before slicing.
