Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 3 tbsp coconut oil, melted
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup pure maple syrup or monk fruit
- 2 tbsp fresh mint, chopped
Method
- 1Preheat oven to 350°F (175°C) and line a pan with parchment.
- 2Whisk together all dry ingredients in a large bowl.
- 3In a separate bowl, beat eggs with sweetener, milk, and vanilla.
- 4Fold wet into dry until smooth — do not overmix.
- 5Pour into the pan and bake 28–32 minutes until a toothpick comes out clean.
- 6Cool completely before slicing.
