Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 tbsp coconut oil, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup pure maple syrup or monk fruit
  • 1/3 cup ground pistachios

Method

  1. 1Preheat oven to 350°F (175°C) and line a pan with parchment.
  2. 2Whisk together all dry ingredients in a large bowl.
  3. 3In a separate bowl, beat eggs with sweetener, milk, and vanilla.
  4. 4Fold wet into dry until smooth — do not overmix.
  5. 5Pour into the pan and bake 28–32 minutes until a toothpick comes out clean.
  6. 6Cool completely before slicing.
